Why I Started Spaghetti Sundays

Spaghetti Sundays started very simply. I needed a day off.

Running Dolce Amore Vault, I am always connected. Messages, questions, pieces, all of it. It does not really stop.

So I decided Sundays would be different. Not perfect. But at least a little.

Instead of posting jewelry, I started posting something else. A woman eating spaghetti, just enjoying it.

I have always loved that image. It is a little sassy, a little flirty, but also just confident. A woman enjoying her food, not overthinking it, a little messy in a good way.

And I kept doing it. At some point it became more than just a post.

People started sending me photos. Women eating spaghetti, images they would come across that reminded them of my Sundays. I never asked for that. But I loved it. It felt like a quiet connection.

Spaghetti Sundays became my pause. A way to step away, even just a little. A reminder that not everything needs to be productive. Some things are just meant to be enjoyed.

Here is the pasta I make most. Simple, but it always brings me back to Rome.

What you need: Spaghetti, 1 to 2 garlic cloves, salt, good whole peeled tomatoes (San Marzano if you can), extra virgin olive oil, fresh basil.

How to make it:

Warm olive oil on low heat and add garlic gently. It should infuse, not brown. Add the tomatoes, crushing them with your hands as they go in. Add salt. Let it simmer about 15 to 20 minutes. It should taste fresh, not heavy. Add basil at the end, torn with your hands, not chopped. Cook the pasta separately in well salted water. Finish the pasta in the sauce with a splash of pasta water. This is what makes it silky. Finish with olive oil and parmesan.
